This machine can be used for Quark or yogurt making. Quark making instructions and equipment are included. The Yolife machine, found on other sites, does not include the outlet timer, the two flour sack towels, or the Quark making instructions and recipes.

It's simple to make Quark with this kit and very little work. You buy buttermilk, put it into the machine and wait. The included timer can be set for the exact time needed. Next, line a colander (not included) with the flour sack towel, pour the thickened buttermilk into it, and let it drain. That's it - Quark has been made, and it can be stored for up to one week in the refrigerator.

Comes with a 5 year manufacturer warranty. 110 Volts.

This machine has been enhanced exclusively for the German Corner to make Quark in addition to yogurt. The entire kit includes:

This machine allows you to make from 1 to 3 quarts at once. It comes with two lids (stack over each other for space saving). Use the small lid for using one quart, or the large lid for up to 3 quarts of buttermilk or yogurt. The machine comes with 7 small jars, which are great for yogurt making. We suggest to use a 7 cup Pyrex glass bowl (not included) for 1 quart, or use up to 3 one quart sized mason jars (not included) for buttermilk to make Quark or yogurt.

1 quart buttermilk will produce about 14 ounces or 340 gr of Quark.
2 quarts buttermilk will produce about 28 ounces or 772 gr of Quark.
3 quarts buttermilk will produce about 42 ounces or 1158 gr of Quark.
This may slightly vary depending on the quality of the buttermilk and how much it has been drained.

Yogurt will be one to one. One quart culture will produce one quart of yogurt, since there is no draining needed.

Quark, an integral part of European culture, is hard to find in North America. Making your own Quark is easy and will only cost a fraction compared to store bought Quark. In addition, it will be free of preservatives and other additives.
Dr. Johanna Budwig's diet consists of Quark and flaxseed oil. Translations usually refer to using cottage cheese or yogurt cheese (drained yogurt). These items are not the same as Quark, even though all of them are low density proteins. You are looking for product made out of live lactococcus lactis cultures. Below is a list of what the items are made of:
  • Quark Culture (base product is buttermilk):
    Homemade with Lactococcus lactis. Beneficial bacteria are in the product.
    Commercially done with rennet, because it is fast. Beneficial bacteria are missing.
  • Buttermilk Culture:
    Homemade with Lactococcus lactis. Beneficial bacteria are in the product.
    Commercially made with Lactococcus lactis. Beneficial bacteria are in the product.
  • Cottage cheese culture:
    Homemade with Lactococcus lactis with the addition of salt to cause the curds. Beneficial bacteria are in the product.
    Commercially made with rennet and salt, because it is fast. Beneficial bacteria are missing.
  • Yogurt Culture:
    Homemade
    with Lactococcus thermophilus. Beneficial bacteria are in the product.
    Commercially made with Lactococcus thermophilus. Beneficial bacteria are most of the time in the product. Sugars, usually in the form of milk powder, are added to make the yogurt stiff.

Product review: I was never a big fan of meatloaf. The ones I tasted were mostly kind of dry and didn't have much flavor. Then I tried a recipe that involves Quark. Product review: LOVE this product. I used to own the 1 quart Quark/yogurt maker, but this one is SO much better because I get a larger quantity instead of having to use the 1 quart machine daily. I am a native of Germany and have lived in the USA for 21 years, now I can eat quark every day. Walmart here in WA has Bulgarian buttermilk, but I have added heavy whipping cream to the buttermilk before using the quark machine and it came out just divine!!! Product review: I just received my Quark maker and made my first batch. It really is quick and easy and tastes just like the Quark from Germany. I am German and have lived in Nebraska for 16 years now. I use the 1% Buttermilk that you find in the store because I have not found any full fat or Bulgarian Buttermilk (perhaps at Whole Foods???) Product review: I made my first batch of quark with this machine two days ago. My husband tasted it last night and assured me it was the "real deal". This is very fortunate because I am learning to make my Swabian mother-in-law's cheesecake and my local store has stopped carrying quark.
